Lemon Dill Halibut Kabobs

 

Ingredients

 

• 1-1/2 lb Halibut fillets
• 2 tsp Grated lemon rind
• 1/4 cup Lemon juice
• 2 tbsp Chopped fresh dill
• 1 tbsp Vegetable oil
• 2 Cloves garlic, minced
• 1/4 tsp Each salt and pepper

 

Serve with grilled mini potatoes and baby carrots. Firm-fleshed fish such as halibut, monkfish or salmon is best because it won't fall apart during cooking.

 

Cut halibut fillets into 1-inch chunks; place in bowl. Whisk together lemon rind and juice, dill, oil, garlic, salt and pepper; pour over the halibut and toss gently to coat. Thread onto eight 8-inch metal skewers. Place on greased grill over medium-high heat or under broiler; close lid and cook, turning once, for about 5 minutes or until halibut is opaque and flakes easily when tested with fork.
